  • 5g salt
  • 2.5g black pepper
  • 2g smoked paprika
  • 3g garlic powder
  • 1g thyme
  • 1 tsp lemon zest
  • 15ml honey
  • 60ml vegetable broth
  • 1 tsp lemon juice
  • 8g parsley, chopped
  • 2 lemon wedges

Instructions

  1. Preheat & Prep: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Dry Chicken: Pat chicken thighs dry with paper towels.
  3. Make Rub: Whisk olive oil, salt, pepper, paprika, garlic powder, thyme, lemon zest, and honey.
  4. Coat Chicken: Coat chicken thighs evenly with the rub.
  5. Marinate Briefly: Let chicken rest for 5 minutes.
  6. Bake Chicken: Bake for 20-22 minutes, until internal temperature reaches 74°C (165°F).
  7. Make Pan Sauce: Simmer vegetable broth in baking sheet, reducing by half.
  8. Finish Sauce: Stir in lemon juice.
  9. Rest Chicken: Let chicken rest for 5 minutes before serving.
  10. Plate & Garnish: Plate with pan sauce, parsley, and lemon wedges.

Notes

For a lighter sauce, remove excess fat from the baking sheet before making the pan sauce. Resting the chicken is crucial for juicy results.
