  • 0.5 cup (120 ml) full-fat sour cream
  • 0.25 cup (60 ml) fresh lime juice, from 2-3 limes
  • 0.25 cup packed (30 g) fresh cilantro, roughly chopped
  • 1 large (5g) garlic clove, minced
  • 0.5 teaspoon (2.5 ml) ground cumin
  • 1 teaspoon (5 ml) fine sea salt, plus more to taste

Instructions

  1. Prepare Ingredients: Carefully halve the ripe avocados, then remove the pits and scoop the creamy flesh into the bowl of a food processor. Roughly chop the fresh cilantro, separating 5g (1 tablespoon) of whole leaves for garnish later.
  2. Combine All Ingredients: Add the full-fat sour cream, fresh lime juice, roughly chopped cilantro, minced garlic clove, ground cumin, and fine sea salt to the food processor with the avocado. Make sure all ingredients are well settled.
  3. Blend Until Smooth: Secure the lid and process the mixture until it’s completely smooth and wonderfully creamy. Stop and scrape down the sides of the bowl as needed to ensure everything is incorporated. If the mixture seems too thick, add a tiny splash (1-2 teaspoons) of cold water or extra lime juice until it reaches your desired consistency. Taste the avocado crema and adjust seasoning with additional salt or lime juice if desired, until it tastes perfect for you.

For best results, use a small food processor. If the crema is too thick, add a splash of water or lime juice. Adjust seasoning (salt, lime, optional pepper) to taste. For convenience, use garlic powder (scant 0.25 teaspoon) instead of fresh garlic.
