Description

Ingredients
- 4 large firm, sweet-tart apples (approx. 800 g / 1.75 lbs)
- 2 tablespoons neutral vegetable oil, for brushing
- 0.5 cup granulated sugar
- 0.5 cup water
- 0.25 teaspoon ground cardamom
- 0.25 teaspoon ground cinnamon
- 1 teaspoon pure rosewater
- 0.25 cup unsalted pistachios, finely chopped
- 1 tablespoon icing sugar, for dusting
Instructions
- Preheat Oven & Prepare Sheets: Preheat your oven to 100°C (210°F). Line two large baking sheets with parchment paper, ensuring the paper lies flat.
- Slice Apples: Wash apples thoroughly. Using a sharp knife or mandoline slicer, carefully core the apples and then slice them as thinly as possible (aim for 1-2 mm / 1/16 inch thickness). Do not peel the apples.
- Arrange & Oil Slices: Arrange the apple slices in a single layer on the prepared baking sheets, ensuring they do not overlap. Lightly brush each slice with a tiny amount of vegetable oil to prevent sticking.
- Bake Chips: Bake for 45 minutes, then carefully flip each apple slice. Continue baking for another 45-75 minutes, or until the chips are completely dry, brittle, and slightly curled at the edges.
- Prepare Glaze: While the apple chips are baking, combine the granulated sugar, water, ground cardamom, and ground cinnamon in a small saucepan. Bring the mixture to a gentle simmer, stirring until the sugar is fully dissolved. Remove from heat and stir in the pure rosewater. Set aside to cool to room temperature.
- Cool Apple Chips: Once the apple chips are fully baked and crisp, remove them from the oven and transfer them to a wire rack to cool completely. They will become even crispier as they cool.
- Glaze Apple Chips: Once the chips are cool, lightly brush or drizzle a thin layer of the spiced rosewater glaze over each chip using a pastry brush or spoon. Do not over-glaze.
- Garnish & Serve: Arrange the glazed apple chips artfully on a platter. Evenly sprinkle the finely chopped pistachios over the chips. Finish with a delicate dusting of icing sugar.
Notes
For best results, make these when apples are in peak season, typically in the fall, to enjoy the fullest flavor and natural sweetness. If chips appear soggy after baking, return them to the oven at a slightly lower temperature (around 90°C / 195°F) for another 15-30 minutes until fully dry. Store in an airtight container at room temperature for up to a week.
