Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon fine sea salt
- 0.5 cup cold unsalted dairy butter, cubed
- 0.25 cup ice water, plus more if needed
- 10.5 oz cremini mushrooms, sliced
- 100 g small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil, divided
- 7 oz cherry tomatoes, halved (Or grape tomatoes if available)
- 2 teaspoons Za’atar spice blend
- 4 large eggs
- 1 cup heavy cream (Half-and-half also works)
- 0.5 cup full-fat dairy milk
- 1.5 cups grated microbial rennet white cheddar cheese
- 0.5 teaspoon black pepper
- 0.25 cup pine nuts, toasted for crunch and garnish
- 0.25 cup fresh flat-leaf parsley, chopped, for garnish
- 0.5 teaspoon sumac, for dusting (optional)
Instructions
- Prep Your Ingredients: Prepare crust dough; chill 30 min. Roll, fit 9-inch tart pan, prick. Slice mushrooms, dice onion, mince garlic. Toss tomatoes with oil, za’atar.
- Sauté Mushrooms & Aromatics: Sauté mushrooms, onion, garlic in olive oil 5-7 min until softened and fragrant. Let cool slightly.
- Whisk the Custard: Whisk eggs, heavy cream, milk, salt, pepper until combined. Stir in cheddar cheese for a creamy mushroom quiche filling.
- Assemble Your Quiche: Scatter cooled mushrooms in crust. Pour custard. Arrange tomatoes on top.
- Bake to Golden Perfection: Preheat oven to 350°F (180°C). Bake the mushroom quiche 40-50 min until center is set, top golden brown.
- Rest and Serve: Remove mushroom quiche from oven; let cool 15+ min before slicing. Serve warm.
