Instructions

  3. Combine Glaze Ingredients: In a large skillet with a lid, combine the unsalted butter, light brown sugar, water, sweet smoked paprika, fine sea salt, and freshly ground black pepper. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves and the mixture is smooth.
  4. Add Carrots & Cook: Add the sliced carrots to the simmering liquid. Stir to coat the carrots evenly. Cover the skillet and reduce heat to medium-low. Cook for 8-10 minutes, or until the carrots are tender-crisp.
  5. Reduce Glaze: Remove the lid and increase the heat to medium-high. Continue to cook, stirring occasionally, for 5-7 minutes. The liquid will reduce and thicken into a glossy, syrupy glaze that beautifully coats the carrots.
  6. Finish with Almonds: Once the glaze has thickened and coats the carrots, remove the skillet from the heat. Stir in half of the toasted sliced almonds, adding texture.
  7. Serve & Garnish: Transfer the glazed carrots to a serving platter. Spoon any remaining glossy glaze over them. Generously scatter the remaining toasted sliced almonds and sprinkle the fresh chopped parsley evenly over the dish.
