  • 700 g (3.5 cups) granulated sugar, (or unrefined cane sugar)
  • 60 ml (0.25 cup) fresh lemon juice
  • 60 ml (0.25 cup) honey, (local wildflower honey preferred, or skip)
  • 2 sprigs fresh rosemary, leaves finely minced (1.5 teaspoons)

Instructions

  1. Prep and Caramelize: Prepare blueberries. In a 10-inch enameled cast iron pot, pour honey. Over medium heat, bubble gently for 3-5 minutes until deep amber and fragrant.
  2. Combine and Boil: Add blueberries, sugar, lemon juice, and minced rosemary. Stir gently. Bring to a full rolling boil over medium-high heat for 5 minutes, stirring frequently until the sugar dissolves and bubbles.
  3. Simmer and Thicken: Reduce heat to medium-low. Simmer, stirring often and mashing berries as they soften, for 20-30 minutes until visibly thickened. The jam should deepen in color and coat a spoon.
  4. Test and Jar: Spoon hot jam onto a chilled plate; refrigerate for 2-3 minutes. Push gently with a finger; if it wrinkles, it’s ready for perfect consistency. Skim any foam, then ladle into sterilized jars (leaving 1 cm headspace) and seal.

Notes

To personalize, add a pinch of cinnamon or a split vanilla bean during simmering, or a teaspoon of lemon zest for extra brightness. Don’t rush the simmering, stir frequently to prevent scorching, and avoid overcooking to maintain spreadability. Store in a cool, dark place.
