Ingredients
- 1-inch piece (15 g) fresh ginger, peeled
- 2 cups (60 g) fresh baby spinach (Or use frozen kale if that(apos)s what(apos)s in your freezer, thawed and squeezed)
- 1 cup (165 g) frozen mango chunks
- 1 cup (165 g) frozen pineapple chunks
- 1 medium (120 g) ripe banana, peeled
- 1.5 cups (360 ml) coconut water (Filtered water works well too, if you prefer less sweetness)
- 2 tablespoons (30 ml) fresh lime juice
- 2 tablespoons (5 g) dried hibiscus flowers
- 0.5 cup (120 ml) water
- 0.25 cup (50 g) granulated sugar
- 0.5 teaspoon fresh lime zest
- 1 thin lime wheel, for garnish
Instructions
- Prepare Hibiscus-Lime Swirl: In a small saucepan, combine dried hibiscus flowers, 120 ml (0.5 cup) water, and 50 g (0.25 cup) granulated sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and continue to simmer for 5 minutes until the liquid is deeply colored and slightly reduced, emitting a lovely floral aroma.
- Steep and Chill Syrup: Remove from heat and let steep for 10 minutes. Strain the syrup through a fine-mesh sieve into a small bowl, pressing on the solids. Discard the hibiscus flowers. Stir in the 0.5 teaspoon fresh lime zest and the additional 15 ml (1 tablespoon) fresh lime juice. Let cool completely to room temperature, then chill in the refrigerator for at least 30 minutes until thoroughly cold to the touch.
- Blend Smoothie Base: Combine the peeled ginger, fresh baby spinach, frozen mango chunks, frozen pineapple chunks, peeled banana, 360 ml (1.5 cups) coconut water, and the initial 15 ml (1 tablespoon) fresh lime juice in a high-speed blender.
- Achieve Smoothness: Blend on high until completely smooth and creamy, about 1-2 minutes. Scrape down the sides of the blender jar as needed to ensure no leafy bits remain; the mixture should look a vibrant, uniform green. (If it appears too thick or not blending well, add a splash more coconut water to loosen it.)
- Assemble Swirl: Take a clear tall glass. Drizzle 1-2 tablespoons of the chilled hibiscus-lime syrup down the inside walls, allowing it to pool slightly at the bottom and create visible crimson streaks.
- Pour and Layer: Slowly pour the green smoothie into the prepared glass over the syrup. The syrup should naturally create captivating ribbons and layers as it mixes with the smoothie(apos)s vibrant green. For a more pronounced swirl, drizzle another tablespoon of hibiscus-lime syrup over the top and gently swirl with a skewer or the handle of a spoon.
