Ingredients
- 150 g (5.3 oz) chipotle peppers in adobo, about 6-8 peppers with 2-3 tablespoons sauce
- 60 g (2.1 oz) yellow onion, roughly chopped (about 0.5 small onion)
- 15 g (0.5 oz) garlic, peeled (about 3 cloves)
- 120 ml (0.5 cup) apple cider vinegar
- 120 ml (0.5 cup) filtered water
- 5 ml (1 teaspoon) ground cumin
- 2.5 ml (0.5 teaspoon) dried Mexican oregano
- 5 ml (1 teaspoon) sea salt
- 60 ml (0.25 cup) agave nectar
- 30 ml (2 tablespoons) fresh lime juice
- Zest from 0.5 lime, finely grated
- Pinch of smoked paprika
Instructions
- Prepare Your Ingredients: Open the can of chipotle peppers in adobo, ensuring peppers and sauce are ready. Roughly chop the yellow onion and peel garlic cloves, setting them aside.
- Combine for Blending: Place chipotle peppers in adobo (with their sauce), chopped onion, peeled garlic, apple cider vinegar, filtered water, ground cumin, dried Mexican oregano, and sea salt into a medium saucepan.
- Blend Until Smooth: Carefully transfer the mixture from the saucepan to a sturdy blender. Blend on high speed for 2-3 minutes until completely smooth and vibrant in color. If too thick, add an extra tablespoon or two of filtered water. For a silky sauce, strain through a fine-mesh sieve, pressing on solids.
- Simmer for Flavor Depth: Pour the smooth, blended sauce back into the medium saucepan. Bring to a gentle simmer over medium-low heat. Let it simmer, uncovered, for 15-20 minutes, stirring occasionally, allowing flavors to meld and sauce to thicken.
- Cool, Swirl, and Store: Let the hot sauce cool for about 15 minutes. While cooling, prepare the Tangy Agave-Lime Swirl: In a small saucepan, combine agave nectar, fresh lime juice, and finely grated 0.5 lime zest. Heat gently over low heat for 3-5 minutes, stirring until slightly thickened and glossy. Once both components have cooled, pour the hot sauce into a clean, dry glass bottle (250-300ml capacity). Carefully pour the agave-lime swirl into the bottle. Use a thin skewer or chopstick to gently swirl the lime mixture through the hot sauce 2-3 times. Allow the complete sauce to cool completely to room temperature before sealing and refrigerating.
