Description

This layered sunrise sunset smoothie recipe features vibrant layers of orange and deep pink, separated by a luscious coconut cream ribbon, making it a fun, family-friendly treat.


Ingredients

  • 200 g frozen mango chunks
  • 100 g frozen pineapple chunks
  • 120 ml fresh orange juice
  • 1 g ground cardamom
  • 150 g frozen raspberries
  • 1 medium frozen banana, sliced
  • 60 ml unsweetened plant milk (oat or coconut)
  • 100 g full-fat coconut cream, chilled (thick part only)
  • 50 g fresh raspberries
  • 2.5 ml pure rosewater
  • 15 ml maple syrup, optional
  • 3 fresh raspberries, for garnish

Instructions

  1. Prepare Cream Ribbon: In a small blender, combine the chilled coconut cream, 50g fresh raspberries, rosewater, and optional maple syrup. Blend until completely smooth. Transfer to a bowl and refrigerate while preparing the layers.
  2. Create Sunrise Layer: In a high-speed blender, combine the frozen mango chunks, frozen pineapple chunks, orange juice, and ground cardamom. Blend until smooth, adding a tiny splash more orange juice if needed to reach a soft-serve consistency.
  3. Create Sunset Layer: Rinse the blender. Add the remaining frozen raspberries, frozen banana slices, and plant milk. Blend until completely smooth, adding a tiny splash more plant milk if needed to reach a similar soft-serve consistency.
  4. Assemble Glasses: Take two tall, clear glasses. Spoon about one-quarter of the chilled Raspberry-Rosewater Coconut Cream Ribbon mixture into each glass. Spread some of the cream up the sides of the glass in streaks. Carefully pour half of the Sunrise Layer smoothie into each glass.
  5. Complete Assembly and Serve: Gently spoon or pour half of the Sunset Layer smoothie on top of the Sunrise Layer in each glass. Spoon the remaining cream ribbon mixture on top, swirl gently, and garnish with fresh raspberries. Serve immediately to show off the layers.

Notes
