- 1 lb (450g) lean ground beef (80/20 or 90/10)
- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 0.5 tsp smoked paprika
- 0.25 tsp dried oregano
- 0.5 cup (120ml) crushed tomatoes
- 0.5 cup (120ml) beef broth
- 2 tablespoons butter
- 0.25 cup flour
- 2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- 0.25 cup cream cheese, softened
- 1–2 tablespoons minced chipotles in adobo
- 1 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 0.25 cup fresh cilantro, chopped (for garnish)
- 0.25 red onion, chopped (for garnish)
- 1 fresh jalapeño, sliced (for garnish)
Instructions
- Prepare the Seasoned Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat. Add diced onion and cook until softened (about 5-7 minutes), then stir in minced garlic, ground cumin, chili powder, 0.5 tsp smoked paprika, and dried oregano. Cook for 1 minute until fragrant. Pour in crushed tomatoes and beef broth. Season with salt and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing flavors to meld.
- Make the Smoky Chipotle Cheddar Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to create a roux. Gradually whisk in whole milk until smooth, continuing to whisk until the mixture thickens (about 3-5 minutes). Reduce heat to low. Add shredded sharp cheddar cheese, softened cream cheese, minced chipotle peppers, 1 tsp smoked paprika, and 0.5 tsp garlic powder. Stir constantly until all cheeses are melted and the sauce is perfectly smooth and creamy.
- Assemble the Nachos: Preheat oven to 375°F (190°C). Spread half of the tortilla chips in a single layer on a large, oven-safe platter or baking sheet. Spoon half of the seasoned ground beef evenly over the chips. Drizzle generously with half of the Smoky Chipotle Cheddar Sauce. Repeat layering with the remaining chips, beef, and cheese sauce.
