Instructions

  1. Roast Garlic: Preheat oven to 400°F (200°C). Toss the unpeeled garlic head with a drizzle of olive oil, wrap in foil, and roast for 20-25 minutes until soft. Let cool slightly, then squeeze the pulp from the skins and mash.
  2. Sauté Aromatics: Heat 1 tablespoon olive oil and 2 tablespoons butter in a medium saucepan over medium heat. Add the minced shallot and sauté for 3-4 minutes until translucent.
  3. Create Roux: Sprinkle the flour over the shallots and stir constantly for 1-2 minutes until nutty and light gold.
  4. Simmer Gravy Base: Gradually whisk in the beef stock until smooth. Stir in the mashed roasted garlic and chopped rosemary. Bring to a gentle simmer for 8-10 minutes, stirring occasionally, until thickened.
