  • 300g (10.5oz) Ripe Tomatoes, Diced
  • 2 Large Garlic Cloves, Minced
  • 2 Tbsp (30ml) Extra-Virgin Olive Oil
  • 1 Tbsp (15ml) Fresh Lemon Juice
  • 1 tsp (5g) Sea Salt
  • ½ tsp (2.5g) Freshly Ground Black Pepper
  • 150g (5.3oz) Roasted Red Bell Pepper, Chopped
  • 1 tsp (2g) Smoked Paprika
  • 100g (3.5oz) Cream Cheese, Softened (Halal-Certified)
  • 2 Tbsp (30ml) Balsamic Reduction
  • 1 Tbsp (15ml) Fresh Basil Leaves, Chopped

Instructions

  1. Preheat & Prepare: Preheat oven to 180°C (350°F).
  2. Combine Cheeses: Mix mozzarella, cheddar, and Parmesan.
  3. Marinate Tomatoes: Toss diced tomatoes with garlic, oil, lemon juice, salt, and pepper.
  4. Make Red Pepper Swirl: Blend roasted pepper, paprika, and cream cheese.
  5. Assemble Dip: Layer cheese, tomatoes, and red pepper swirl.
  6. Swirl & Top: Swirl red pepper into tomatoes and top with remaining cheese.
  7. Bake: Bake for 15-20 minutes until bubbly and golden.
  8. Rest & Serve: Let rest for 5 minutes, drizzle with balsamic reduction, and garnish with basil.
