  • 42g (3 Tbsp) butter, cubed
  • 30ml (2 Tbsp) olive oil
  • 4 garlic cloves, minced
  • 5g (1 tsp) kosher salt
  • 2.5g (½ tsp) black pepper
  • 30ml (2 Tbsp) honey
  • 5ml (1 tsp) lime juice
  • 5g (1 tsp) chipotle powder
  • 2.5g (½ tsp) smoked paprika
  • Fresh cilantro, chopped, for garnish
  • Lime zest, for garnish

Instructions

  1. Preheat Skillet: Preheat oven to 200°C (400°F) and heat skillet over medium-high heat.
  2. Sear Chicken: Pat chicken dry, season with salt and pepper, and sear skin-side down for 6-7 minutes until golden brown.
  3. Baste with Butter: Flip chicken, add butter and garlic, and spoon melted butter over chicken for 2 minutes.
  4. Make Glaze: Whisk together honey, lime juice, chipotle powder, and smoked paprika.
  5. Glaze and Roast: Pour glaze over chicken, toss to coat, and roast for 12-15 minutes until cooked through.
  6. Rest and Finish: Let rest for 3 minutes, then drizzle with pan juices.
  7. Garnish & Serve: Garnish with cilantro and lime zest.
