- 300g (10.5oz) ripe bananas, mashed
- 200g (1 cup) all-purpose flour
- 150g (¾ cup) granulated sugar
- 5g (1 tsp) baking powder
- 2.5g (½ tsp) baking soda
- 1.5g (¼ tsp) salt
- 115g (½ cup) unsalted butter, melted
- 2 large eggs, room temperature
- 5ml (1 tsp) vanilla extract
- 120ml (½ cup) milk
- 100g (1 cup) walnuts, chopped
- 150g (5.3oz) ripe bananas, pureed
- 100g (½ cup) brown sugar (for caramel)
- 30g (2 tbsp) unsalted butter (for caramel)
- 1g (¼ tsp) sea salt (for caramel)
- 50g (⅓ cup) walnuts, chopped (for streusel)
- 30g (2 tbsp) brown sugar (for streusel)
- 20g (2 tbsp) all-purpose flour (for streusel)
- 20g (1½ tbsp) unsalted butter, melted (for streusel)
- 200g (8oz) cream cheese, softened
- 50g (¼ cup) unsalted butter, softened (for frosting)
- 80g (⅔ cup) powdered sugar, sifted
- 15ml (1 tbsp) honey
- 2.5ml (½ tsp) ground cinnamon
- 5ml (1 tsp) vanilla extract (for frosting)
- Extra toasted walnut pieces (for garnish)
- Additional banana caramel drizzle (for garnish)
Instructions
- Preheat & Prep: Preheat oven to 175°C (350°F) and grease a 23cm (9-inch) round cake pan with parchment paper.
- Combine Dry: Whisk flour, sugar, baking powder, baking soda, and salt.
- Combine Wet: Mix melted butter, mashed bananas, eggs, vanilla, and milk.
- Combine Mixtures: Gently combine wet and dry ingredients.
- Fold in Walnuts: Fold in chopped walnuts.
- First Batter Layer: Spread half the batter in the pan.
- Make Caramel Swirl: Melt butter, stir in brown sugar, then bananas and salt.
- First Caramel Swirl: Drizzle half the caramel and swirl gently.
- Second Batter Layer: Pour remaining batter over caramel.
- Second Caramel Swirl: Drizzle remaining caramel and swirl.
- Bake: Bake for 45-50 minutes, or until a toothpick comes out clean.
- Cool: Cool in pan for 10 minutes, then invert to cool completely.
- Walnut Streusel: Combine walnuts, brown sugar, flour, and melted butter.
- Apply Streusel: Sprinkle streusel over warm cake.
- Cream Cheese Frosting: Beat cream cheese and butter, add powdered sugar, honey, cinnamon, and vanilla.
- Frost & Garnish: Frost cooled cake, drizzle with caramel, and sprinkle with walnuts.
Notes
For a more intense walnut flavor, toast the walnuts before adding them to the batter. Don’t overmix the batter to avoid a tough cake.
