Ingredients
- 500g (1.1lb) Boneless Skinless Chicken Thighs (Halal)
- 2 tbsp (30ml) Olive Oil
- 1 tsp (5g) Smoked Paprika
- 1 tsp (5g) Ground Cumin
- ½ tsp (2.5g) Garlic Powder
- ½ tsp (2.5g) Onion Powder
- Salt and Pepper to Taste
- 200g (1 cup) Long-Grain White Rice
- 400ml (1 ¾ cup) Water or Vegetable Broth
- 1 tbsp (15ml) Lime Juice (for rice)
- 2 tbsp (30g) Fresh Cilantro, Chopped (divided)
- 1 can (400g / 15oz) Black Beans, Drained and Rinsed
- 1 cup (150g) Frozen Corn Kernels, Thawed
- 1 medium Avocado, Diced
- 1 cup (150g) Cherry Tomatoes, Halved
- 1 cup (30g) Shredded Lettuce
- 120g (½ cup) Greek Yogurt or Sour Cream
- 1 tbsp (15ml) Lime Juice (for crema)
- 1 tsp (5g) Chipotle Powder
- 1 tsp (5ml) Olive Oil (for crema)
- 1 tsp (5g) Honey (optional)
- 1 tbsp (5g) Fresh Cilantro, Chopped (for crema)
- Pinch of Salt (for crema)
Instructions
- Prepare Rice Base: Distribute cilantro-lime rice among bowls.
- Layer Bean & Corn: Add black bean and corn mixture to each bowl.
- Add Grilled Chicken: Arrange sliced chicken on top.
- Introduce Freshness: Add diced avocado and halved tomatoes.
- Top with Lettuce: Sprinkle shredded lettuce over ingredients.
- Crema Swirl: Add chipotle lime crema and swirl across ingredients.
- Garnish & Serve: Sprinkle with cilantro and serve with a lime wedge.
