- 500g flank steak, thinly sliced
- 60ml (¼ cup) orange juice, fresh
- 30ml (2 Tbsp) lime juice, fresh
- 30ml (2 Tbsp) olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chipotle powder
- 1 tsp + pinch sea salt
- ½ tsp black pepper
- 1 Tbsp chopped cilantro + extra for garnish
- 200g (1 cup) long-grain rice
- 480ml (2 cups) water
- 1 tsp salt (for rice)
- 400g (15oz) canned black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 1 cup (150g) corn kernels
- 120ml (½ cup) sour cream or Greek yogurt
- 1 Tbsp chipotle powder (for crema)
- 1 tsp lime zest
- 1 Tbsp lime juice (for crema)
- 1 tsp honey
- 2 radishes, thinly sliced
- 2 Tbsp toasted pumpkin seeds
- Lime wedges
Instructions
- Marinate Steak: Combine orange juice, lime juice, olive oil, garlic, cumin, paprika, chipotle powder, salt, and pepper. Marinate steak for 20-30 minutes.
- Cook Rice: Rinse rice, then cook with water and salt until tender. Fluff with a fork.
- Grill Steak: Sear steak strips for 2-3 minutes per side, until medium-rare. Rest for 5 minutes, then slice.
- Sauté Vegetables: Sauté bell pepper, onion, and corn until softened.
