Ingredients

1 large bell pepper (red or yellow)

23 slices turkey or your preferred protein

1 slice cheese (Swiss, cheddar, or mozzarella)

2 tbsp hummus or cream cheese

1/4 avocado, sliced

Cucumber slices or baby spinach

Optional: mustard, pesto, or hot sauce


Instructions

1. Cut bell pepper in half lengthwise and remove seeds.

2. Spread hummus or cream cheese on both halves.

3. Layer turkey, cheese, avocado, and veggies on one half.

4. Add mustard or other flavor boosters if desired.

5. Top with other half of pepper and gently press together.

6. Serve fresh and enjoy immediately or wrap for lunch.
