Pease Pudding Recipe Traditional Split Peas

Pease Pudding Recipe Traditional Split Peas

  • Yield: 8 servings 1x
  • Diet: Vegan

Description

Hearty, comforting Pease Pudding, made with yellow split peas and savory spices. This budget-friendly, creamy side dish is nourishing for family dinners.

Ingredients

Scale
  • 1 lb (450g) yellow split peas
  • 1 tsp smoked paprika
  • 2 tbsp nutritional yeast (optional, for extra cheesy depth)
  • 1 medium onion, chopped
  • 1 bay leaf
  • 68 cups (1.41.9 liters) water or vegetable broth
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)

Instructions

  1. Rinse and Soak: Rinse 1 lb (450g) yellow split peas thoroughly. Soak overnight for faster cooking, then drain.
  2. Simmer with Aromatics: In a large pot, combine drained peas, chopped onion, bay leaf, smoked paprika, nutritional yeast (if using), and 6-8 cups water or broth. Bring to a boil, then reduce heat to a gentle simmer.
  3. Cook Until Tender: Simmer, partially covered, for 1 to 1.5 hours (2-2.5 hours if not soaked), or until the peas are very soft and mushy. Stir occasionally to prevent sticking. Add more liquid if needed.
  4. Remove and Mash: Carefully remove the bay leaf. Drain any excess liquid, reserving about 1 cup (240ml). Mash the peas with a potato masher or an immersion blender until smooth and creamy. Add reserved liquid gradually until desired consistency is reached.
  5. Season to Perfection: Stir in salt and pepper to taste, adjusting seasonings as needed.

Notes

Estimates: Nutritional data is estimated as it was not provided in the original article.

For richer flavor, add a pinch of dried thyme. Any smoky seasoning blend can replace smoked paprika. Opt for low-sodium broth and organic split peas if desired.

For a richer, more traditional texture, stir in a knob of plant-based butter or a splash of non-dairy cream at the very end. For a lighter, healthy meal option, skip any added fats and ensure you’re using low-sodium broth.

To avoid common mistakes, stir frequently to prevent peas from sticking to the bottom of the pot. Ensure peas are very tender before mashing for the best creamy texture.
