Parkin Cake Sticky Ginger Oat

  • Author: Nicole Martinez
  • Total Time: 70 minutes
  • Yield: 12 servings 1x
  • Diet: General

Description

This easy Parkin Cake Sticky Ginger Oat recipe is a hearty, family-friendly delight, offering a deeply flavorful, moist, and wonderfully sticky cake. It’s a time-tested favorite, perfect for any occasion and surprisingly easy to make.

Ingredients

Scale
  • 1.5 cups rolled oats
  • 0.5 cup dark treacle or molasses
  • 0.5 cup unsalted butter
  • 0.5 cup packed light brown sugar
  • 1.25 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp baking soda

Instructions

  1. Prepare Tin And Preheat Oven: Preheat oven to 325°F (160°C). Lightly grease a 8-inch (20cm) square baking tin and line with parchment paper, leaving an overhang to easily lift out the cake.
  2. Melt Wet Ingredients: In a medium saucepan, gently melt the butter, treacle, and light brown sugar over low heat. Stir occasionally until everything is dissolved and smooth, about 5 minutes.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, all-purpose flour, ground ginger, mixed spice, and baking soda until well combined.
  4. Mix Wet And Dry: Pour the melted wet ingredients into the dry ingredients. Stir gently until just combined and no dry streaks remain. If the batter looks too dry, splash in 1-2 tablespoons warm water or milk.
  5. Bake The Cake: Pour the batter into the prepared tin, spreading it evenly. Bake for 45-50 minutes, or until the top is golden brown and a skewer inserted into the center comes out mostly clean, with perhaps a few moist crumbs.

Notes

For dietary needs, use certified gluten-free rolled oats and a quality plant-based butter for dairy-free. Reduce treacle by 1-2 tablespoons for less sweetness, or use maple syrup or local honey for different notes. For a spicier cake, add an extra 0.5 tsp ground ginger or a pinch of freshly ground black pepper. For a kid-friendly version, reduce ginger slightly to 1.5 teaspoons and add 0.5 tsp cinnamon. Avoid overmixing to prevent toughness and overbaking to retain moisture and stickiness; start checking for doneness at 40 minutes.
