Ingredients
- 1.5 cups jasmine rice
- 1 can (13.5 oz) full-fat coconut milk, or light coconut milk
- 0.5 cup water
- 0.5 teaspoon salt, sea salt or kosher salt recommended
Instructions
- Rinse Rice: Gently rinse 1.5 cups of jasmine rice under cold water until the water runs mostly clear to prevent stickiness and yield fluffier grains.
- Combine Ingredients: In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Stir gently just to mix.
- Bring to Boil: Bring the mixture to a gentle boil over medium heat, watching for small bubbles and stirring occasionally to prevent clumping.
- Cover and Cook: Reduce heat, cover tightly, and cook for 15-18 minutes until the liquid is absorbed and rice is tender. Do not lift the lid.
- Rest and Fluff: Remove from heat and let stand, covered, for 5 minutes. Gently fluff with a fork before serving.
Notes
For a lighter version, use light coconut milk. Add a squeeze of lime juice or lime/lemon zest at the end for a bright finish. Consider adding a pandan leaf or kaffir lime leaves during cooking for extra aroma, or stir in shredded coconut flakes for texture. Use a non-stick pan for easy cleanup.
