- 2 cups milk, any kind
- 2 large eggs

- 1 tsp baking powder
- 0.5 tsp salt
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
- 0.5 tsp lemon zest
Instructions
- Prep Your Dish: Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Combine Wet Ingredients: In a large bowl, whisk together 2 cups milk, 2 large eggs, 0.25 cup sweetener, and 1 tsp vanilla until well combined and frothy.
- Mix Dry Ingredients: In another bowl, combine 2 cups rolled oats, 1 tsp baking powder, 0.5 tsp cinnamon, and 0.5 tsp salt. Stir until thoroughly blended.
- Bring Ingredients Together: Add the dry oat mixture to the wet ingredients and stir gently until just combined. Fold in most of the 1 cup blueberries and half of the 0.5 cup sliced almonds. (If mixture looks dry, splash in 1-2 tablespoons more milk.)
- Pour and Top: Pour the mixture into your prepared 9×13 inch baking dish. Sprinkle the remaining blueberries and almonds evenly over the top.
- Bake to Perfection: Bake for 30-35 minutes, or until the top is golden brown and the center is set (a toothpick inserted near the center should come out clean).
Notes
For dietary needs, use dairy-free milk or gluten-free oats. Sugar alternatives can reduce sugar content. If the bake is too dry, add 1-2 tablespoons more milk before baking. If not set, bake for another 5-10 minutes. If browning too quickly, tent with foil.
