  • 34 lbs whole chicken, pat thoroughly dry
  • 3 tbsp olive oil
  • 2 tbsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp salt
  • 0.5 tsp black pepper, freshly ground
  • 2 sprigs fresh rosemary, chopped (or 0.67 tsp dried)
  • 4 sprigs fresh thyme, chopped (or 1.33 tsp dried)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prep Chicken: Preheat your oven to 400°F (200°C). Lay the chicken on a clean surface and pat it thoroughly dry with paper towels.
  2. Make Herb Oil: In a small bowl, combine the olive oil, sweet paprika, garlic powder, onion powder, salt, black pepper, chopped fresh rosemary, thyme, and parsley. Stir until well combined and forms a fragrant paste.
  3. Season & Coat: Generously rub the herb oil mixture all over the chicken, making sure to get some under the skin, especially on the breast. Tuck wing tips under and tie legs together with kitchen twine if a compact bird is preferred.
  4. Roast Chicken: Place the seasoned chicken on a rack in a sturdy roasting pan. Roast for 60-75 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh (not touching bone).
  5. Rest & Serve: Once roasted, remove the chicken from the oven. Tent it loosely with foil and let it rest for 10-15 minutes before carving.

Notes

If the skin browns too quickly, loosely tent with foil. For a faster method, spatchcocking the chicken can reduce roasting time by 15-20 minutes. Consider removing the skin before eating to reduce fat intake.
