Description

  • 1 cup (120 g) all-purpose flour, divided
  • 0.25 cup (30 g) cornstarch
  • 1 teaspoon (5 g) baking powder

  • 0.5 teaspoon (2 g) black pepper, divided
  • 1 teaspoon (5 g) smoked paprika, divided
  • 0.75 cup (180 ml) unsweetened oat milk (or water)
  • 2 cups (120 g) panko breadcrumbs
  • Vegetable oil spray
  • 60 ml maple syrup
  • 15 ml apple cider vinegar
  • 5 g chipotle powder
  • 2 g garlic powder
  • 2 g onion powder
  • 30 ml water
  • 5 g cornstarch
  • 1 tablespoon (5 g) fresh chives

Instructions

  1. Prepare the Onions and Dredging Stations: Peel the onions and slice them into 1 cm (0.4 inch) thick rings, separating them gently. Prepare three shallow dishes for dredging: one with seasoned flour (90 g flour, 2 g salt, 2 g pepper, 2 g paprika), one with the wet batter (remaining flour/cornstarch/baking powder/salt/paprika/oat milk), and one with panko breadcrumbs. Whisk the dry ingredients together thoroughly in each dish.
  2. Dredge and Coat the Rings: Coat each onion ring first in the seasoned flour, tapping off any excess. Next, dip the ring into the wet batter, ensuring full coverage, and let excess drip off briefly. Finally, firmly press the ring into the panko breadcrumbs, coating thoroughly on all sides.
  3. Air Fry the Onion Rings: Preheat your air fryer to 190°C (375°F). Lightly spray the air fryer basket with vegetable oil. Arrange the breaded onion rings in a single layer in the basket (work in multiple batches). Lightly spray the tops of the onion rings with vegetable oil, then air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  4. Prepare the Spicy Maple-Chipotle Glaze: While the onion rings cook, prepare the glaze: combine maple syrup, chipotle powder, apple cider vinegar, garlic powder, and onion powder in a small saucepan over medium heat. Bring the mixture to a gentle simmer. In a separate small bowl, prepare a cornstarch slurry by whisking together 30 ml water and 5 g cornstarch. Whisk the slurry into the simmering glaze and cook for 1-2 minutes, stirring continuously until the glaze thickens.
  5. Glaze and Serve: Once all batches of onion rings are cooked, transfer them to a large bowl. Pour about two-thirds of the warm glaze over the rings and gently toss to coat. Serve immediately, drizzled with the remaining glaze and garnished with fresh chives.

Notes

Use one hand for wet ingredients and one for dry to avoid mess when dredging. To ensure a thick glaze, whisk together another 0.5 teaspoon cornstarch with 1 teaspoon water and add slowly if the mixture is too thin after simmering for 2 minutes.
