Description

Crispy air-fried potatoes paired with a creamy, spicy harissa-yogurt sauce. The air fryer ensures a golden-brown, crispy exterior and tender interior, while the sauce provides a refreshing balance of heat and cool mint for a versatile side dish.

Ingredients

Scale
  • 900 g (2 pounds) Yukon Gold or Russet potatoes, cut into 1.5 cm cubes (peeled or unpeeled)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup full-fat plain yogurt
  • 1 to 2 tablespoons harissa paste
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, finely minced
  • 1/4 cup chopped fresh mint leaves
  • 1/2 teaspoon sumac

Instructions

  1. Prep Potatoes and Preheat: Preheat the air fryer to 390°F (200°C). In a large bowl, toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until every piece is evenly coated in the seasoning mixture.
  2. Air Fry in Batches: Place the seasoned potatoes in the air fryer basket in a single layer, ensuring not to overcrowd it. Air fry for 18-25 minutes, shaking the basket vigorously halfway through cooking, until the potatoes are golden-brown and crispy on the outside and tender inside.
  3. Prepare Harissa Drizzle: While the potatoes cook, whisk together the plain yogurt, harissa paste, fresh lemon juice, and finely minced garlic in a small bowl. Adjust seasoning with a pinch of salt to taste, ensuring the sauce is smooth and thick enough to cling to the potatoes.
  4. Serve and Garnish: Transfer the crispy air-fried potatoes to a serving platter. Drizzle generously with the prepared harissa-yogurt sauce, and then sprinkle immediately with the chopped fresh mint and sumac to finish.

Notes

For best results, cut potatoes into uniform pieces and avoid overcrowding the air fryer basket to prevent steaming. Shaking the basket halfway through cooking ensures consistent crispiness on all sides. Leftovers can be stored for up to 3 days and reheated in the air fryer for 5-7 minutes to regain crispness.
