Description
A creamy, tangy twist on classic Alabama white barbecue sauce, incorporating a flavorful smoked paprika and roasted garlic swirl for a stunning presentation and rich flavor profile.
Ingredients
Scale
- 1 cup full-fat mayonnaise
- 0.33 cup apple cider vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon prepared horseradish
- 1 tablespoon Dijon mustard
- 1 teaspoon granulated sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon fine sea salt
- 0.5 teaspoon freshly ground black pepper
- 2 medium heads garlic
- 2 tablespoons olive oil, divided
- 2 teaspoons smoked paprika
- 1 tablespoon fresh chives, finely chopped (optional)
Instructions
- Roast The Garlic: Preheat oven to 400°F (200°C). Slice off the top 1/4 inch of garlic heads, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 40-50 minutes until soft. Let cool, then mash cloves into a paste.
- Prepare Sauce Base: Whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, garlic powder, onion powder, black pepper, salt, and sugar in a medium bowl until smooth. Refrigerate for at least 30 minutes.
- Make Paprika Garlic Paste: Combine the mashed roasted garlic paste (from step 1) with the remaining 1 tablespoon of olive oil and smoked paprika in a separate bowl. Mix until a reddish-orange paste forms (add extra apple cider vinegar if needed for consistency).
- Swirl Sauces Together: Divide the white sauce, mixing one-third with the paprika garlic paste. Gently spoon this reddish-orange mixture into the remaining plain white sauce. Swirl lightly with a skewer or knife to create distinct ribbons; do not overmix.
- Serve And Garnish: Serve over grilled meat and garnish with fresh chives.
Notes
To achieve the best results, avoid light mayonnaise as it tends to be too thin. For a slightly tangier flavor, substitute half the mayonnaise with plain Greek yogurt. Ensure you use *smoked* paprika, not sweet paprika, for the intended flavor profile. Freshly squeezed lemon juice is essential; avoid bottled concentrate for superior flavor.
