Instructions

  1. Preheat Oven & Prep Muffin Tin: Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease it well.
  2. Whisk Dry Ingredients: In a large bowl, whisk together the 1.5 cups flour, 0.5 cup granulated sugar, baking powder, baking soda, and salt until no lumps remain.
  3. Whisk Wet Ingredients: In a separate medium bowl, whisk the egg, 0.75 cup milk, 0.5 cup vegetable oil, and vanilla extract until well combined and light yellow.
  4. Combine Batter & Fold in Apples: Pour the wet ingredients into the dry ingredients and stir gently just until barely combined (a few streaks of flour are fine). Gently fold in the diced apples.
  5. Prepare Streusel Topping: In a small bowl, combine 0.5 cup flour, 0.25 cup brown sugar, and 0.5 teaspoon cinnamon. Add the cold, cubed butter and use fingertips or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Fill Muffin Cups & Top with Streusel: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle a generous amount of the streusel mixture over the top of each muffin, pressing lightly.
