Instructions
- Preheat Oven & Prep Muffin Tin: Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease it well.
- Whisk Dry Ingredients: In a large bowl, whisk together the 1.5 cups flour, 0.5 cup granulated sugar, baking powder, baking soda, and salt until no lumps remain.
- Whisk Wet Ingredients: In a separate medium bowl, whisk the egg, 0.75 cup milk, 0.5 cup vegetable oil, and vanilla extract until well combined and light yellow.
- Combine Batter & Fold in Apples: Pour the wet ingredients into the dry ingredients and stir gently just until barely combined (a few streaks of flour are fine). Gently fold in the diced apples.
- Prepare Streusel Topping: In a small bowl, combine 0.5 cup flour, 0.25 cup brown sugar, and 0.5 teaspoon cinnamon. Add the cold, cubed butter and use fingertips or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Fill Muffin Cups & Top with Streusel: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle a generous amount of the streusel mixture over the top of each muffin, pressing lightly.
- Bake Until Golden: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown. Allow to cool slightly in the tin before transferring to a wire rack.

Overmixing leads to tough muffins; stir gently until just combined. For dietary variations, consider flax egg for vegan, plant-based milk, or applesauce for oil. Reduce sugar for a lower sugar option. Muffins are excellent for meal prep breakfast.
