Instructions

  1. Combine and Simmer Apples: In a large, heavy-bottomed pot, combine the sliced apples, water, 60 ml maple syrup, cinnamon, nutmeg, lemon juice, and salt. Stir to coat the apples evenly. Bring the mixture to a simmer over medium heat, then reduce the heat to low.
  2. Cook Until Tender: Cover the pot tightly and cook on low for 15-20 minutes, or until the apples are very tender and can be easily pierced with a fork. Check frequently to avoid overcooking.
  3. Mash or Blend Puree: Remove the pot from the heat. Mash with a potato masher for a chunky texture or use an immersion blender for a smooth consistency. Taste and adjust sweetness if desired.
  4. Prepare Tahini Swirl: In a separate small bowl, combine the tahini, remaining 45 ml maple syrup, vanilla extract, and a small pinch of salt. Whisk vigorously until the mixture is completely smooth and creamy.
  5. Swirl and Serve: Divide the warm apple puree among serving bowls. Spoon dollops or streams of the prepared tahini mixture over the puree. Gently swirl the tahini into the puree using a small skewer or spoon to create patterns before serving.

Notes

Use a combination of apple varieties for balanced sweetness and tartness, such as Granny Smith for acidity and Fuji or Honeycrisp for sweetness. Avoid overcooking the apples to prevent a watery puree. For the best swirl texture, use high-quality, smooth tahini. The base puree can be made ahead and stored separately from the tahini swirl.
