Description

This Atlantic Beach Pie Lemon Lime Sunshine Slice is a refreshing and creamy dessert that combines a unique salty cracker crust with a bright, zesty lemon-lime filling. It is an easy, family-friendly treat perfect for any occasion, filling your kitchen with a delightful citrus aroma.

Ingredients

Scale
  • 1.5 cups saltine crackers, finely crushed (150g)
  • 0.5 cup unsalted butter, melted (113g)
  • one 14-oz can sweetened condensed milk (397g)
  • 0.5 cup fresh lemon juice (120ml)
  • 0.25 cup fresh lime juice (60ml)
  • 4 large egg yolks
  • whipped cream, for serving (optional)
  • fresh citrus zest, for serving (optional)

Instructions

  1. Prepare the Crust: Crush 1.5 cups (150g) saltines finely. Melt 0.5 cup (113g) unsalted butter. Combine crumbs and butter until moist. Press firmly into a 9-inch pie plate. Bake at 350(degree)F (175(degree)C) for 8-10 minutes until lightly golden. Cool completely.
  2. Make the Filling: Whisk one 14-oz (397g) can sweetened condensed milk, 0.5 cup (120ml) fresh lemon juice, 0.25 cup (60ml) fresh lime juice, and 4 large egg yolks until smooth. It will thicken as it combines.
  3. Pour and Bake: Pour filling into cooled crust. Bake for 15-20 minutes, or until the edges are set and the center jiggles slightly. (If it looks dry, splash in 1-2 Tbsp milk.)
  4. Chill to Perfection: Cool on a rack for 30 minutes. Transfer to the fridge and chill for at least 4 hours, preferably overnight, until thoroughly set and firm. This is key for a sliceable pie.

Notes

To avoid a soggy crust, ensure crackers are finely crushed and press firmly. Blind bake slightly longer if needed for extra crispness. Prevent cracked filling by avoiding overbaking; the center should still jiggle slightly. If the pie is too tart, add an extra tablespoon of sweetened condensed milk next time to balance the acidity. Using fresh citrus juice and farm-fresh eggs makes a significant difference in flavor and texture.
