Instructions

  1. Thaw Puff Pastry: Let your frozen puff pastry sheets thaw at room temperature for about 20-30 minutes, or until pliable and slightly softened to the touch.
  2. Prep Brie: Cut your brie into small, bite-sized pieces, roughly 0.5 to 0.75 inch (1.2-1.9 cm) cubes. No need to remove the rind.
  3. Cut Pastry: Unroll the thawed puff pastry onto a lightly floured surface. Using a pizza cutter or sharp knife, cut each sheet into 12-16 equal squares, aiming for even sizing so they bake similarly.
  4. Assemble Bites: Place a small piece of brie in the center of each pastry square. Top with about 0.5 teaspoon (2.5 ml) of cranberry sauce. Be careful not to overfill, as too much will cause leaks when baked.
  5. Seal & Egg Wash: Bring the corners of the pastry up and pinch them together tightly over the filling, creating a small parcel. Gently press all seams to seal securely. Whisk the egg with a tablespoon of water for an egg wash. Brush each Baked Brie Bite with the egg wash until they glisten.
