Ingredients
- 3.3 lbs chicken wings, drumettes and flats separated, wingtips removed, thoroughly dried
- 2 tsp aluminum-free baking powder
- 1.5 tsp fine sea salt
- 0.5 tsp freshly ground black pepper
- 0.5 cup unsalted butter, melted (or dairy-free butter alternative)
- 0.5 cup classic cayenne pepper hot sauce (like Frank’s RedHot)
- 1–2 whole chipotle peppers in adobo sauce, finely chopped with some adobo sauce
- 2 tbsp fresh lime juice (for glaze)
- 1 tbsp fresh lime juice (for drizzle)
- 1 tbsp light brown sugar
- 1 tsp garlic powder
- 1 large ripe avocado (approx. 200g), pitted and scooped
- 1 clove fresh garlic, minced
- 2–4 tbsp water or unsweetened plant-based milk, as needed for consistency
- 0.25 cup fresh cilantro, finely chopped
- 2–3 lime wedges, for serving
Instructions
- Prep Your Wings: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper and top with a wire rack. Pat chicken wings very dry. In a bowl, toss wings with 2 tsp aluminum-free baking powder, 1 tsp fine sea salt, and 0.5 tsp freshly ground black pepper. Arrange wings on the wire rack in a single layer.
- Bake Wings: Bake for 25 minutes, then flip the wings. Continue baking for another 20-30 minutes until golden brown, visibly crispy, and reaching an internal temperature of 175°F (80°C).
- Prepare Glaze: In a medium saucepan, combine 0.5 cup melted unsalted butter, 0.5 cup cayenne hot sauce, 1-2 finely chopped chipotle peppers with adobo, 2 tbsp fresh lime juice, 1 tbsp light brown sugar, and 1 tsp garlic powder. Whisk gently over low heat until warm and the sugar dissolves. Do not boil.
- Finish and Serve: Transfer hot, crispy wings to a large clean bowl. Pour the warm glaze over the wings and toss thoroughly until every wing is evenly coated. In a food processor, blend the scooped avocado, 1 tbsp fresh lime juice, 1 minced fresh garlic clove, 0.5 tsp fine sea salt, and 2 tbsp water or plant-based milk until completely smooth. Add more liquid 1 tbsp at a time if the drizzle is too thick. Arrange the glazed wings, generously drizzle with the creamy avocado mixture, and finish by scattering fresh cilantro and placing lime wedges alongside.
