Instructions
- Preheat & Prepare: Preheat oven to 180°C (350°F) and grease a 9×13 inch baking dish.
- Combine Dry Ingredients: Whisk together flour, baking soda, salt, cinnamon, and sugars.
- Mix Wet Ingredients: Combine melted butter, mashed bananas, eggs, vanilla, and milk.
- Combine Wet & Dry: Gently mix wet and dry ingredients until a soft dough forms.
- Roll Out Dough: Roll dough into a 30cm x 40cm (12 x 16 inches) rectangle.
- Prepare Swirl: Beat cream cheese, butter, maple syrup, and vanilla until creamy.
- Swirl It Up: Spread swirl over dough, leaving a 2cm (¾ inch) border.
- Roll & Cut: Roll dough tightly and cut into 12 pieces.
- Arrange & Bake: Place rolls in baking dish and bake for 20-25 minutes.
- Make Glaze: Melt butter, stir in maple syrup and powdered sugar.
- Glaze & Garnish: Drizzle glaze over rolls and sprinkle with coconut and cinnamon.
- Rest & Serve: Let rest for 5 minutes before serving.
Notes
For best results, use very ripe bananas and softened cream cheese. Avoid overmixing the dough to prevent tough rolls.
