Instructions
- Mash Bananas: In a large bowl, mash 3 very ripe bananas thoroughly until mostly smooth, with a few small lumps remaining. This takes about 2 minutes to achieve a good base.
- Combine Dry Ingredients: In a separate bowl, whisk together 1.5 cups all-purpose flour, 0.25 cup granulated sugar, and 1.5 teaspoons baking powder. Ensure even distribution, making a well in the center.
- Mix Wet Ingredients: Add 0.5 cup milk and 1 large egg to the mashed bananas, stirring until well combined and slightly frothy. This usually takes under a minute.
- Combine Wet And Dry: Pour the wet ingredients into the dry ingredients. Mix gently with a spoon until just combined; if it looks dry, splash in 1-2 Tbsp more milk. Overmixing will lead to tough fritters, so stop when no streaks of flour remain.
- Heat Oil: Heat about 2-3 inches of vegetable oil in a deep 10-inch skillet or pot over medium-high heat. Aim for 350-375(deg)F (175-190(deg)C). A small drop of batter should sizzle immediately.
- Fry Fritters: Drop spoonfuls of batter (about 1.5 tablespoons each) into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, until golden brown and cooked through. The fritters will puff up nicely.
- Drain Excess Oil: Using a slotted spoon, remove the cooked banana fritters and transfer them to a wire rack set over paper towels to drain excess oil. This ensures maximum crispness.
- Dust With Caramel Gold Sesame Dust: While the fritters are still warm, immediately dust them generously with the irresistible Caramel Gold Sesame Dust. This helps the topping adhere.
