Description

This BBQ Chicken Potato Skillet is a flavorful and easy one-pan meal featuring tender chicken, crispy potatoes, and vibrant bell peppers in a tangy BBQ glaze. It’s perfect for busy weeknights and casual gatherings.


Ingredients

  • 500g (1lb 1oz) Chicken Breast: Cut into 2cm cubes
  • 300g (10oz) Baby Potatoes: Halved
  • 150g (5oz) Red Bell Pepper: Sliced
  • 120g (4oz) Yellow Onion: Diced
  • 2 Cloves Garlic: Minced
  • 2 tbsp (30ml) Olive Oil
  • 4 tbsp (60ml) Barbecue Sauce
  • 1 tsp (5g) Smoked Paprika
  • 0.5 tsp (2.5g) Ground Cumin
  • 0.5 tsp (2.5g) Sea Salt
  • 0.25 tsp (1g) Black Pepper
  • 2 tbsp (30ml) Lime Juice
  • 2 tbsp (30g) Cilantro: Chopped
  • 1 tbsp (15g) Sesame Seeds: Toasted
  • 1 tbsp (15ml) Honey (Optional)

Instructions

  1. Marinate Chicken: Combine cubed chicken with BBQ sauce, smoked paprika, cumin, salt, and pepper; marinate for 15+ minutes.
  2. Roast Potatoes: Toss halved potatoes with olive oil and salt; spread on a baking sheet.
  3. Roast Potatoes: Roast potatoes at 200°C (400°F) for 15 minutes, until tender and crispy.
  4. Sauté Vegetables: Sauté diced onion and bell pepper in olive oil for 4-5 minutes, until softened.
  5. Bloom Garlic: Stir in minced garlic and cook for 30 seconds, until fragrant.
  6. Cook Chicken: Add marinated chicken to skillet and cook for 5-6 minutes, until cooked through.
  7. Combine & Finish: Add roasted potatoes, BBQ sauce, and lime juice; toss to combine and cook for 2 minutes.
  8. Garnish & Serve: Sprinkle with sesame seeds and cilantro; serve with lime wedges.

Notes

For optimal crispiness, ensure potatoes are in a single layer on the baking sheet. A cast-iron skillet is ideal for even cooking and easy cleanup.
