- 2 tbsp (30ml) Rice Vinegar
- 1 tbsp (15ml) Low-Sodium Soy Sauce
- 1 tsp (5ml) Toasted Sesame Oil
- 1 tsp (5ml) Honey
- 1 clove Garlic, minced
- 1 tsp (5g) Ginger, grated
- 1/2 tsp (2g) Red Pepper Flakes
- 1 tbsp (15ml) Vegetable Oil
- 1 tsp (5g) Sugar (optional)
- 1 tbsp (15g) Toasted Sesame Seeds
- 2 tbsp (8g) Fresh Cilantro, chopped
- 1 thin Red Chili (optional), sliced
Instructions
- Prepare Cucumbers: Slice, seed, and salt cucumbers for 10 minutes, then rinse and dry.
- Make Dressing: Whisk together vinegar, soy sauce, sesame oil, honey, garlic, ginger, pepper flakes, oil, and sugar.
- Combine & Coat: Toss cucumbers, carrot, and onion with dressing.
- Chill & Fuse: Refrigerate for 15-60 minutes to meld flavors.
- Plate & Garnish: Serve chilled, garnished with sesame seeds and cilantro.
