Whisk egg yolks separately, then gradually ladle about 0.5 cup of the hot cream into the yolks, whisking continuously until tempered. Pour tempered yolks back into the saucepan. Cook over medium-low heat, stirring constantly, until custard thickens to coat the back of a spoon (approximately 80 degrees C or 175 degrees F), ensuring it does not boil. Remove from heat and stir in the black sesame paste and vanilla; (if your custard shows any tiny lumps, pass it through a fine-mesh sieve now for ultimate smoothness).
- Chill Thoroughly and Prepare Swirl: Pour the custard through a sieve into a clean bowl, cover the surface tightly with plastic wrap, and chill in the refrigerator until completely cold (at least 4 hours or preferably overnight).
