Instructions

  2. Make the Lime-Green Crema: In a small bowl, combine 0.5 cup (120g) sour cream (or Greek yogurt), 2 Tbsp (30ml) lime juice, 1 Tbsp (7g) lime zest, and 0.25 cup (10g) finely chopped fresh cilantro. Stir until smooth and a vibrant green. Season with a pinch of salt.
  3. Blacken the Shrimp: Heat a heavy-bottomed 10-inch cast iron skillet over medium-high heat until very hot. Add shrimp in a single layer, not overcrowded. Cook for 2-3 minutes per side until opaque and nicely charred with a deep color.
