  • 60 g (1/4 cup) granulated sugar (for puree)
  • 15 ml (1 tablespoon) fresh lemon juice
  • Pinch of salt
  • 85 g (3 oz) dark chocolate, finely chopped
  • 15 g (2 tablespoons) unsweetened cocoa powder
  • 30 g (2 tablespoons) granulated sugar (for swirl)
  • 60 ml (1/4 cup) water or plant-based milk
  • 2.5 ml (1/2 teaspoon) ground cinnamon
  • 2.5 ml (1/2 teaspoon) alcohol-free vanilla extract
  • Finely grated zest of 1/2 orange (garnish)

Instructions

  1. Cook Blueberry Base: Combine blueberries, 60g sugar, lemon juice, and salt in a saucepan. Cook over medium heat for 8-12 minutes, stirring occasionally, until berries burst and soften.
  2. Blend Puree: Transfer the mixture to a blender and blend until completely smooth. For a silky puree, strain it through a fine-mesh sieve to remove skins and seeds.
  3. Prepare Chocolate Swirl: In a separate small saucepan, combine the chopped chocolate, cocoa powder, 30g sugar, liquid (water or milk), and cinnamon. Heat on low, stirring constantly until the chocolate melts into a smooth, glossy sauce. Remove from heat and stir in the vanilla extract.
  4. Create Swirl Effect: Pour about two-thirds of the warm blueberry puree into a serving container. Drizzle half of the chocolate swirl mixture over the surface and gently swirl with a spoon or skewer to create ribbons.
  5. Layer and Garnish: Add the remaining blueberry puree on top of the first swirl layer. Drizzle with the remaining chocolate swirl mixture and repeat the gentle swirling process. Garnish with fresh orange zest before serving.

Notes

Store the blueberry puree and chocolate swirl separately for best results. The puree keeps for up to 5 days refrigerated and can be frozen for up to 3 months. The chocolate swirl will thicken when cold; reheat gently with a splash of liquid to return it to a drizzling consistency.
