  • 0.125 teaspoon salt
  • 1 tablespoon cornstarch (for thickening, optional)
  • 2 tablespoons cold water (for cornstarch slurry, optional)

Instructions

  1. Combine Ingredients: In a medium 10-inch saucepan, combine 2 cups blueberries, 0.25 cup granulated sugar, 0.25 cup water, and 1 tablespoon lemon juice. Stir gently to combine.
  2. Simmer Gently: Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until berries soften and burst and sauce thickens slightly. Mash some berries for a chunkier texture if desired. If too dry, add 1-2 tablespoons more water.
  3. Thicken (Optional): For a thicker sauce, whisk 1 tablespoon cornstarch with 2 tablespoons cold water to create a slurry. Stir into the simmering sauce and cook for 1 minute, stirring constantly, until desired consistency is reached (it should lightly coat the back of a spoon).
  4. Stir in Zest: Remove from heat and stir in 1 teaspoon fresh lemon zest to keep the lemon flavor bright and fresh.
  5. Cool and Serve: Let the sauce cool slightly in the saucepan before serving. The sauce will thicken further as it cools.

Notes

For a thicker sauce, simmer longer or add more cornstarch slurry (half the original amount). If too thick, stir in 1-2 tablespoons of water or orange juice.
