  • 4 tbsp (56 g) unsalted butter (or olive oil or plant-based butter for dairy-free)
  • 12 tsp ground turmeric
  • 23 cloves garlic, minced
  • 1 cup (240 ml) vegetable or chicken broth (or plain water)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of smoked paprika, chopped fresh parsley, or touch of red pepper flakes

Instructions

  1. Prepare Cabbage: Remove tough outer leaves from the cabbage, then quarter, core, and thinly slice it.
  2. Boil Cabbage: In a large pot (10-inch or larger), bring 1 cup (240 ml) of broth to a boil over high heat. Add the sliced cabbage and some salt. Cook for 5-8 minutes, until the cabbage is tender-crisp.
  3. Drain Cabbage: Drain the cooked cabbage thoroughly in a colander, pressing out any excess water with a spoon until no more liquid streams.
  4. Make Turmeric Butter: In the same pot, melt 4 tbsp (56 g) of butter over medium heat. Add the minced garlic and 1-2 tsp of turmeric, then cook for 1 minute, stirring constantly, to ‘bloom’ the spices.
  5. Combine and Season: Return the drained cabbage to the pot with the turmeric butter. Toss gently to coat the cabbage evenly. Season to taste with additional salt and black pepper before serving.

Notes

For added brightness, squeeze fresh lemon juice over the finished dish before serving. To make it a more robust main course, consider stirring in cooked chickpeas, chicken sausage, sauteed onions, or bell peppers with the turmeric butter. Organic cabbage and grass-fed butter are recommended for enhanced flavor and nutrition. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
