Description

Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle with 1 tablespoon olive oil and sprinkle with a pinch of salt. Wrap tightly in aluminum foil.
  2. Bake and Cool: Roast the garlic for 35-45 minutes, or until the cloves are soft and caramelized. Let cool completely in the foil packet for 15-20 minutes.
  3. Mash Cloves into Paste: Once cooled, squeeze the soft roasted garlic cloves out of their skins into a small bowl. Mash them with a fork or use a stick blender until a smooth paste forms.
  4. Combine Ingredients: In a medium bowl, whisk together the mashed roasted garlic with the mayonnaise, sriracha sauce, sweet chili sauce, lime juice, honey, and smoked paprika until smooth. Add a small splash of cold water if the ingredients resist combining.
  5. Season and Chill: Taste the sauce and adjust seasoning as necessary with extra salt or lime juice. Refrigerate for at least 30 minutes, or up to 2 hours, before serving to allow the flavors to deepen.
  6. Garnish for Serving: Spoon the chilled sauce into a small dipping bowl. Garnish with a light dusting of smoked paprika and sprinkle with fresh chopped chives.
