  • 1 pint (300 g) cherry or grape tomatoes
  • 12 oz (340 g) short-cut pasta (penne or fusilli)
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) olive oil
  • 0.25 cup (5 g) fresh basil or parsley, chopped
  • Salt & Pepper, to taste

Instructions

  1. Prep Tomatoes: On a large sheet pan, toss 1 pint (300g) cherry or grape tomatoes with 1 tbsp (15ml) olive oil, salt, and pepper. Roast at 400(degree)F (200(degree)C) for 15-20 minutes until softened, burst, and beautifully caramelized.
  2. Cook Pasta: Cook 12 oz (340g) short-cut pasta in well-salted water until al dente. Reserve 1 cup (240ml) pasta water before draining.
  3. Make Sauce: In a large skillet over medium-low heat, melt 1 (5.2 oz/150g) package Boursin cheese with 0.5 cup (120ml) reserved pasta water, stirring until smooth and wonderfully creamy. (If the sauce looks too thick, a splash more pasta water will fix it instantly).
  4. Combine Ingredients: Add the drained pasta and blistered tomatoes to the skillet with the creamy sauce. Toss gently to coat everything, adding more reserved pasta water (0.25 cup/60ml at a time) if needed for desired consistency.
  5. Finish and Serve: Stir in 0.25 cup (5g) fresh basil or parsley. Season to taste with additional salt and pepper as needed.

Notes

Use pre-minced garlic for convenience or microwave tomatoes for a quicker blister (though roasting adds more flavor). Cook pasta al dente and always reserve pasta water for the sauce. Avoid cooking Boursin cheese on high heat to prevent separation.
