- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 4 cups (960 ml) beef broth, low-sodium
- 2 Tbsp (30 ml) olive oil
- 1 tsp paprika
- 0.5 tsp cumin
- 0.25 tsp allspice
- Salt, to taste
- Black pepper, to taste
- 2 large carrots, chopped
Instructions
- Prep Brisket: Pat the brisket dry thoroughly with paper towels. Season it generously on all sides with salt, pepper, and paprika.
- Sear: Heat olive oil in a large, oven-safe Dutch oven over medium-high heat until shimmering. Carefully place the brisket in the pot and brown it on all sides until deeply caramelized, about 2-3 minutes per side. Remove the brisket and set it aside.
- Sauté Aromatics: Add the chopped onion and minced garlic to the same pot, cooking until softened and fragrant, about 3-4 minutes. Deglaze the pan with a splash of beef broth, scraping up any browned bits from the bottom with a wooden spoon.
- Braise: Return the brisket to the pot. Add the remaining beef broth and the pomegranate molasses (and carrots, if using). Bring the liquid to a gentle simmer on the stovetop. Cover the pot tightly with its lid and braise in a preheated 300(degree)F (150(degree)C) oven for 3-4 hours, or until the brisket is incredibly fork-tender and easily pulls apart.
- Rest & Serve: Carefully remove the brisket from the pot and let it rest on a cutting board for at least 15 minutes. While it rests, skim any excess fat from the surface of the sauce. If desired, thicken the pomegranate molasses lacquer slightly on the stovetop over medium heat by simmering for 5-10 minutes until it reduces to your preferred consistency. Slice the brisket against the grain into thick pieces and generously spoon over the rich, flavorful sauce.

If the liquid level appears too low during braising, add 0.5 cup (120ml) more broth. For low-carb eating, ensure your beef broth is sugar-free. This braised brisket recipe is naturally dairy-free and high-protein.
