  • 150g (5.3oz) fresh blackberries
  • 30ml (2 Tbsp) honey (plus 1 Tbsp for glaze)
  • 5g (1 tsp) fresh rosemary, chopped (plus 1 sprig for garnish)
  • 15ml (1 Tbsp) lemon juice
  • 25g (2 Tbsp) granulated sugar
  • 1 large egg, beaten
  • Pinch of sea salt

Instructions

  1. Prepare Compote: Combine blackberries, sugar, lemon juice, honey, and rosemary; cook until thickened (5-7 minutes).
  2. Layer Phyllo: Brush 3 phyllo sheets with butter and salt.
  3. Add Filling: Arrange brie on phyllo, top with blackberry compote.
  4. Top & Bake: Cover with remaining phyllo, brush with butter and egg; bake at 190°C (375°F) for 20-25 minutes.
  5. Glaze & Serve: Drizzle with rosemary honey glaze, garnish, and serve warm.
