- 200g (7oz) brie cheese, sliced
- 150g (5.3oz) fresh blackberries
- 30ml (2 Tbsp) honey (plus 1 Tbsp for glaze)
- 5g (1 tsp) fresh rosemary, chopped (plus 1 sprig for garnish)
- 15ml (1 Tbsp) lemon juice
- 25g (2 Tbsp) granulated sugar
- 1 large egg, beaten
- Pinch of sea salt
Instructions
- Prepare Compote: Combine blackberries, sugar, lemon juice, honey, and rosemary; cook until thickened (5-7 minutes).
- Layer Phyllo: Brush 3 phyllo sheets with butter and salt.
- Add Filling: Arrange brie on phyllo, top with blackberry compote.
- Top & Bake: Cover with remaining phyllo, brush with butter and egg; bake at 190°C (375°F) for 20-25 minutes.
- Glaze & Serve: Drizzle with rosemary honey glaze, garnish, and serve warm.
