Description

A warm, savory Broccoli Kugel baked casserole perfect for busy weeknights. This family-friendly dish, made with frozen broccoli, eggs, and cheese (optional), is wholesome and comforting.

Ingredients

Scale
  • 16 oz / 450g frozen chopped broccoli, thawed and thoroughly squeezed dry
  • 4 large eggs
  • 1 cup / 240g cottage cheese or sour cream
  • 1/2 cup / 60g all-purpose flour or matzo meal
  • 1 small onion, grated or finely diced
  • 2 tbsp / 30g butter or oil, divided
  • 1 tsp / 5g salt
  • 1/2 tsp / 2.5g black pepper
  • 1/2 tsp / 2.5g garlic powder

Instructions

  1. Prep Oven & Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with 1 tbsp butter or oil.
  2. Sauté Aromatics (Optional but Recommended): In a small pan, melt 1 tbsp butter or oil. Sauté the finely diced onion until softened and translucent, about 5 minutes. Set aside.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk together the eggs, cottage cheese/sour cream, any remaining melted butter/oil (if you skipped sautéing onions), salt, pepper, and garlic powder until well combined.
  4. Mix Dry into Wet: Gradually add the flour or matzo meal to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Fold in Broccoli & Onion: Gently fold in the thawed, well-squeezed dry chopped broccoli and the sautéed onions (if using) into the mixture until evenly distributed.
  6. Transfer & Bake: Pour the mixture into the prepared baking dish and spread evenly. Bake for 45-55 minutes, or until the top is golden brown and the Kugel is set in the center. A knife inserted near the center should come out clean.

Notes

  • Substitutions: For a lighter option, use high-protein low-fat cottage cheese or Greek yogurt. A gluten-free flour blend works well.
  • Optional Upgrades: Add 1/2 cup (50g) shredded cheddar or Parmesan cheese on top. Use caramelized onions for a deeper, sweeter flavor.
  • Tips: Ensure broccoli is thoroughly thawed and squeezed dry to prevent a watery Kugel. Avoid overmixing the batter for a light and fluffy result.
