Instructions

  1. Prep Broccoli Rabe: Wash 1 bunch (1 lb) broccoli rabe thoroughly. Trim off any tough, woody ends. For less bitterness, blanch the greens in boiling salted water for 2-3 minutes until bright green, then drain and immediately plunge into ice water. Squeeze out excess water gently.
  2. Sauté Aromatics: Heat 2 Tbsp olive oil in a large 12-inch skillet over medium heat until shimmering. Add 3-4 cloves minced garlic and 0.5 tsp red pepper flakes. Cook for about 1 minute, stirring constantly, until the garlic is fragrant and lightly golden (do not let it burn; it will turn bitter!).
  3. Add Broccoli Rabe: Add the prepped broccoli rabe to the skillet with the fragrant garlic and chili oil. Toss to coat the greens evenly.
  4. Cook Until Tender-Crisp: Sauté for 5-7 minutes, stirring occasionally, until tender-crisp and vibrant green. Season with salt and pepper to taste.

Notes

For less bitterness, blanch broccoli rabe in boiling salted water for 2-3 minutes, then plunge into ice water and squeeze dry. Broccolini or regular broccoli florets (about 4 cups / 400g) can be substituted; just adjust cooking time. Adjust red pepper flakes for desired spice level. For richness, finish with a knob of butter or a sprinkle of Parmesan cheese.
