Ingredients
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 0.75 cup (60g) unsweetened cocoa powder
- 2 large eggs
- 0.5 cup (113g) unsalted butter, melted
- 1 tsp vanilla extract
- 0.25 tsp salt
- 1 cup (170g) white chocolate chips
- 2–3 drops green food coloring
- 0.5 tsp peppermint extract
Instructions
- Preheat Oven & Prepare Pan: Preheat your oven to 350(degree)F (175(degree)C) and line a mini muffin tin with paper liners or grease well.
- Whisk Wet Ingredients: In a large bowl, whisk together the melted butter and granulated sugar until the mixture looks smooth and slightly thickened.
- Add Eggs & Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated, then stir in the vanilla extract until just combined.
- Combine Dry Ingredients: Add the unsweetened cocoa powder, all-purpose flour, and salt to the wet ingredients. Mix gently until just combined (do not overmix).
- Fill Muffin Cups: Divide the brownie batter evenly among the prepared mini muffin cups, filling each about two-thirds full.
- Bake Brownie Bites: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out with moist crumbs, not wet batter.
- Cool Completely: Let the brownie bites cool completely in the tin before removing them to a wire rack.
- Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring after each, until smooth and creamy.
- Add Food Coloring: Stir in a few drops of green food coloring until you achieve your desired vibrant mint green shade.
- Infuse Mint Flavor: Add the peppermint extract and mix well to infuse the flavor throughout the drizzle.
- Prepare for Drizzling: Transfer the mint green drizzle to a piping bag or a small Ziploc bag with a corner snipped off.
- Drizzle & Set: Drizzle decoratively over the cooled brownie bites, then let the drizzle set completely before serving (about 15-20 minutes at room temperature).
Notes
Use a good quality cocoa powder for best results. Do not overmix the batter to keep brownie bites tender. For best texture, pull brownies from the oven when a few moist crumbs remain. If your chocolate seizes during melting, stir in a tiny bit of vegetable oil or shortening until smooth again. For a milder mint flavor, start with less extract and add more to taste. Store in an airtight container at room temperature. Consider gluten-free flour blend or dairy-free butter for dietary adjustments, or add a shot of espresso for deeper chocolate flavor.
