Description

  • 5 ml (1 tsp) garlic powder
  • 2.5 ml (0.5 tsp) onion powder
  • 5 ml (1 tsp) fine sea salt
  • 2.5 ml (0.5 tsp) freshly ground black pepper
  • 60 ml (0.25 cup) avocado oil or other neutral high-heat oil
  • 60 g (4 tbsp) unsalted butter
  • 120 ml (0.5 cup) classic vinegar-based hot sauce (e.g., Frank’s RedHot)
  • 30 ml (2 tbsp) honey
  • 2 chipotle peppers in adobo, finely minced
  • 15 ml (1 tbsp) adobo sauce from the can
  • 2.5 ml (0.5 tsp) smoked paprika
  • 2.5 ml (0.5 tsp) garlic powder (for glaze)
  • 15 ml (1 tbsp) apple cider vinegar
  • 2 fresh scallions, thinly sliced, for garnish

Instructions

  1. Prep the Wings: Thoroughly pat the chicken wings dry with paper towels. In a large bowl, combine the dried wings with baking powder, garlic powder, onion powder, salt, and black pepper; toss until evenly coated. Drizzle the wings with avocado oil and toss again to ensure all pieces are lightly coated.
  2. Air Fry the Wings: Preheat your air fryer to 200°C (400°F). Arrange the seasoned wings in a single layer in the air fryer basket; do not overcrowd. Air fry the wings for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy and reach an internal temperature of 74°C (165°F).
  3. Prepare the Smoky Honey Chipotle Glaze: While the wings are cooking, prepare the glaze in a small saucepan. Combine the unsalted butter, hot sauce, honey, minced chipotle peppers, adobo sauce, smoked paprika, garlic powder (for glaze), and apple cider vinegar. Heat over medium-low heat, stirring occasionally, until the butter is melted and the sauce simmers gently for 3-5 minutes, allowing it to slightly thicken and become glossy.
  4. Toss and Serve: Once the wings are cooked and crispy, transfer them immediately to a large heatproof bowl. Pour the warm Smoky Honey Chipotle Glaze over the hot wings and toss thoroughly with tongs until every wing is evenly coated.
