buffalo wing sauce recipe

  • Author: Amanda Miller
  • Total Time: 35 minutes
  • Yield: 8 servings 1x
  • Diet: General

Description

This easy and delicious homemade buffalo wing sauce recipe delivers a vibrant kick with a rich, glossy texture, perfect for family dinners or game day wings. It features roasted garlic and smoked paprika for a gourmet touch, balancing tang, spice, and a touch of sweetness.

Ingredients

Scale
  • 0.25 cup neutral vegetable oil
  • 6 large garlic cloves, peeled
  • 0.5 cup unsalted butter, cubed
  • 1 tablespoon smoked paprika
  • 1 cup cayenne pepper hot sauce (such as Frank’s RedHot style, ensure alcohol-free)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon light brown sugar, packed
  • 1 teaspoon onion powder
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup fresh chives, finely chopped (for garnish)

Instructions

  1. Preheat Oven & Roast Garlic: Preheat oven to 180 C (350 F). Toss 6 peeled garlic cloves with 0.25 cup vegetable oil on a small baking sheet. Roast 15-20 minutes until golden and tender. Let cool.
  2. Melt Butter & Infuse Flavors: In a small saucepan over medium-low heat, melt 0.5 cup unsalted butter. Add mashed roasted garlic and 1 tablespoon smoked paprika. Stir and infuse gently for 5 minutes, allowing flavors to meld and create aromatic warmth.
  3. Combine Wet & Dry Ingredients: Stir in 1 cup cayenne pepper hot sauce, 2 tablespoons apple cider vinegar, 1 tablespoon brown sugar, 1 teaspoon onion powder, 0.5 teaspoon salt, and 0.5 teaspoon black pepper.
  4. Whisk & Simmer Sauce: Increase heat to medium. Bring to a gentle simmer, whisking. Simmer 8-10 minutes, stirring, until the sauce thickens and coats a spoon.
  5. Cool & Serve: Remove from heat. Allow to cool for a few minutes; the sauce will thicken slightly as it cools. Toss thoroughly cooked, crispy wings with warm sauce until evenly coated. Garnish with finely chopped fresh chives.

Notes

For a dairy-free option, use vegan butter. For a low-carb meal, omit brown sugar and ensure hot sauce has no added sugar. If sauce appears to separate, whisk vigorously over low heat to re-emulsify. If too thick, thin with a tiny splash more hot sauce or warm water while reheating, whisking well.
