Description

This Salsa Verde Layered Burrito Bake is an easy, family-friendly meal featuring seasoned ground beef, beans, corn, and cheese layered with tortillas. It’s a hearty casserole that comes together fast for a satisfying weeknight dinner.

  • 1 Tbsp olive oil
  • 1 lb lean ground beef (or lean ground turkey)
  • 1 medium onion, diced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 can (15 oz) black beans, rinsed and drained (or pinto beans)
  • 1 can (15 oz) corn, drained (frozen corn works well)
  • 1.5 cups salsa verde
  • 8 medium (8-inch) flour tortillas (use corn or certified gluten-free flour tortillas for a GF option)
  • 2 cups shredded Monterey Jack or cheddar cheese (a dairy-free blend works)
  • Fresh cilantro, chopped

Instructions

  1. Prepare Filling: Heat olive oil in a 10-inch skillet. Brown ground beef and onion, breaking apart, until beef is no longer pink and onion softens. Drain excess fat.
  2. Season Mixture: Stir in ground cumin, chili powder, garlic powder, salt, and pepper; cook until fragrant. Add black beans, corn, and 0.75 cup of salsa verde. Mix until warm.
  3. Set Up Dish: Preheat oven to 375°F (190°C). Spread 0.25 cup of salsa verde across the bottom of a 9×13 inch baking dish.
  4. Build First Layer: Place two overlapping tortillas. Spoon one-third of the meat mixture over them. Sprinkle generously with 0.5 cup of shredded cheese.
  5. Layer Remaining Ingredients: Repeat layering twice with tortillas, meat mixture, and cheese. Top with tortillas, the remaining salsa verde, and a final generous layer of cheese.
  6. Bake Burrito Bake: Bake for 20-25 minutes, until the cheese is bubbly, golden, and edges are slightly crisp.
  7. Rest And Garnish: Remove the burrito bake from the oven and let it rest for 5 minutes before slicing. Garnish with fresh cilantro before serving.

Notes

If layers look dry, splash in 1-2 Tbsp water before baking.
